FRIDAY'S FESTIVE FARE..."Low Fat, Spicy Tortilla Chips"!

SPICY LOW-FAT TORTILLA CHIPS

With a little ingenuity, great tasting snacks can be made in a healthy manner, with low calories to boot! Enjoy these low fat, low calorie Tortilla Chips. Better yet, bake them with the help of the kids!

Makes: 12 servings

Prep: 10 mins

Bake: 8 mins to 10 mins 375°F

Ingredients12 corn tortillas (7-inch)

1 tablespoon Flavored Oil (recipe follows) OR: olive oil

1 teaspoon coarse (kosher) salt

Your Favorite fresh Salsa (try my favorite, Safe Way, Black Bean South West...10 Caloires for two Tablespoons! YUM!!!

Directions
1. Preheat oven to 375 degrees F.

2. Brush tortillas lightly with Flavored Oil or olive oil. Stack the tortillas; cut into sixths. Arrange pieces in single layers on baking sheets. Sprinkle the pieces evenly with the salt.

3. Bake in 375 degree F oven for 8 to 10 minutes or just until chips begin to color. Serve with salsa for dipping. Makes 12 servings.

Flavored Oil

Ingredients1/2 cup olive oil

1/4 cup chopped cilantro stems

2 tablespoons chopped, seeded jalapeno pepper

1 teaspoon ground chili powder

1 teaspoon ground cumin

Directions

Heat olive oil in a small skillet over medium heat. Stir in cilantro stems, jalapeno pepper, ground chili powder and ground cumin. Remove from heat. Cool. Strain through fine-mesh strainer into bowl. Save remaining oil for brushing on tortillas or burritos or enchiladas

Use just a little in your prep and then...ENJOY!
