
That's
how our minds work. Tell us we CAN'T have or DO something and there
you have it, we're off to the races just to get a peek at IT. We become
fixated on getting the one thing we think we can't have. If you've read
my four part Stress Reduction Series of late, that information is
sounding pretty familiar right now isn't it? Well, it's because its
TRUE!
So I search high and low for things that I can partake of on a REGULAR basis that fit this single criteria;
1)Whatever it is... It must be Low Calorie, Good For You and taste UNBELIEVABLY GREAT!
We're
talking something that's so incredibly good, it actually raises
controversy! These Yummy diamonds in the rough must be full pledged -
mouth watering - jaw dropping morsels that cause one to wonder if what
their eating is actually something a "Low Calorie, Healthy Food addict
might actually partake of"!
Well, I've found a few....but in most cases, YOU DO HAVE TO MAKE THEM!
The
Recipe below fit's my Criteria Equation Just Right! So hit the store,
gather your ingredients and start baking. In my book, these muffins are a
WIN- WIN!

Low Fat (Low Calorie) - Apple Bran Muffins

Original Recipe Yield 12 muffins
Ingredients:
Directions
- In a small bowl, combine bran and buttermilk. Set aside to soak for 10 minutes.
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease muffin pan, or use paper liners.
- In a large bowl, mix together flour, brown sugar and baking soda. Stir in bran mixture and egg whites. Fold in grated apple. Divide batter into 12 muffin cups.
- Bake in preheated oven for 16 to 18 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool for 5 minutes before removing from the pan.
